It’s Provence’s ‘other’ pastis, whose recipe was accomplished in 1990 and which is still made from plants at the Distilleries et Domaines de Provence distillery in Forcalquier.

Since the dawn of time, to quench their thirst, our ancestors have prepared alcoholic drinks made from aniseed that they mix with water. Yet it was only in 1932 that the word ‘pastis’ appeared, thanks to Paul Ricard’s famous version. Less popular, but more elegant, Henri Bardouin pastis, produced since 1990 in the Distilleries et Domaines de Provence distillery in Forcalquier, is preferred by connoisseurs. Probably because it has managed to maintain all the authenticity of the Provençale hinterland and perpetuate the tradition of homemade pastis.

Henri Bardouin pastis takes its name from he who, after the Second World War, had the idea of concocting a new pastis recipe in the distillery in the town of Lure. The major asset of this top shelf liquor? Its natural blend of more than 65 different herbs and spices including star anise, cardamom, Tonka beans, nutmeg, cloves, angelica, cinnamon, lemon balm, sage, rosemary, licorice root, thyme, verbena, coriander, St. John’s wort, chamomile, oregano, linden tree, and fennel… The rest of the recipe is held secret; the best way to discover the other ingredients is to taste it.
