Mathias Bettinger’s White Truffle Tagliatelle

With pride of place this season, the white truffle is prepared in so many ways to satisfy the most demanding palates. Mathias Bettinger, Chef at the Château des Alpilles, divulges an original recipe that pairs the famous "white gold" with delicious homemade tagliatelle, in the spirit of his Mediterranean cuisine.

Serves 4

Fresh egg pasta

300g flour
1 extra fresh egg
4 egg yolks
30ml olive oil
water

1. Put the flour in the food processor and add the egg yolks and olive oil.

2. Pulse until it forms the consistency of breadcrumbs, then tip onto a floured surface and knead until you have a firm, smooth dough.

3. Put through the pasta machine on the tagliatelle setting. Refrigerate.

For the sauce

50g fresh truffle
4 tablespoons olive oil
300ml cream
200ml milk
20g butter
50g lamb's lettuce

1. Wash the truffle by brushing it under cold water, then slice finely with a truffle grater. Add olive oil and a little salt.

2. Bring a pot of water to a boil, cook the tagliatelle al dente and drain.

3. In a sautoir pan, bring to the boil the milk, cream, butter and half the truffle. Add the tagliatelle. Season and add the lamb's lettuce. Stir.

4. Serve in a shallow bowl and garnish with the remaining truffle and shavings of aged Parmesan.
