In the Heart of the Camargue Salt Harvest

The salt harvest takes place at the end of summer within the 10,000-hectare Aigues-Mortes salt marshes. Camargue sea salt is collected there by ‘sauniers,’ the local salt workers and heirs of a long tradition.

The 10,000 hectares of salt marshes located at the foot of the walls of the village of Aigues-Mortes in the Camargue are under surveillance more than ever. Next month, it will be time to harvest the salt that will have completed the crystallization process begun last April. It’s during summer, when it’s warm, that the 140 basins take on a strange pinky-red color… A natural process resulting from microscopic algae made up of carotene that colonizes highly salted water.

When the ‘white gold’ forms little mounds, called ‘salt cakes,’ they are delicately brought to shore by the sauniers. As tradition would have it, this handful of genuine experts (there’s only 10 of them in Aigues-Mortes) harvest the salt by hand, and know exactly how to manage the salt level of the marshes according to the weather.

The Aigues-Mortes salt works may be visited from March to November, via a discovery route on a scenic railway, or an expedition in a four-wheel drive, which take in the harvest of a little Camargue sea salt… There’s something for all the family. Don’t miss it !
