Estérelle Payany : A Provencal in the Kitchen

Native to the Mediterranean and passionate about cooking, Estérelle Payany dreamed of writing about the gastronomy of Provence. In her new book "Provence, les meilleures recettes,” presenting the best recipes of Provence, she spotlights this cuisine of near and far.

Estérelle Payany learned to read with a recipe book. "I read recipes like they were stories," says the journalist and cookbook author, born in Istres, a village 60km northwest of Marseille. Her first name says a lot about her personality, it refers both to the fairy in Frédéric Mistral’s novel “Calendal,” but also the famous mountain range located by the Mediterranean.

No doubt, Estérelle Payany was destined to write about this region so dear to her heart. The book was an opportunity to pay tribute to a living, evolving cuisine. Throughout the recipes, the author demonstrates the richness of the territory. "It's a place of transit, which has been enriched by population movements. The cooking style comes from afar."

For the author, Provencal cuisine is not just about bouillabaisse. “In local recipes, the influence of Italy, Algeria and Armenia can be felt," says she who believes that there are several Mediterranean cuisines. Her favorite recipes? Her mother’s “one-eyed” bouillabaisse, prepared with eggs, and her father’s calamari salad, staples from her childhood.
